                                                                      Wheat Bread

   Enjoy hot home made soft loaf bread with maska!!!




Ingredients :

Whole wheat flour : 1 1/2 cup 
All purpose flour ( maida) : 3/4 cup
Milk powder : 1/4 cup
Dry yeast : 2  tsp
Powdered jaggery : 2 tsp
Salt : 3/4 tsp
Butter : 2 tsp 
 oil : 3 tsp
Warm water : 1  cup ( may require little more or less )

Recipe :
1. Take yeast & jaggery in bowl.
2. Add 1/2 cup warm water in yeast & sugar mixture.
3. Keep aside for 5 - 10 minutes.
4. You will observe bubbles & mixture will be fluffy.
5. Add salt, melted butter, wheat flour, milk powder & maida . Mix to prepare a nice dough.
6. Transfer the dough on clean greased platform. Knead the dough about 10 min. till it becomes elastic.Use  oil as required. 3 tsp will be good enough.  
7. Prepare a soft dough  & keep in a big bowl .Cover the bowl  . Let it rest for 1 hour.
8. After 1 hour the dough will be double of original size.
9. After 1 hour punch the dough & again knead for 2-3 minutes.
10. Prepare the shape of the loaf in a greased loaf pan. Here I used round mould.
11. Again keep it for proving till it doubles.
12. After proving  apply  little water on the top so that it will not be dry.
13. Sprinkle sesame seeds on the top if you like. You can use oats or mixed herbs also.
14. Bake the loaf in preheated oven at180 C for 25 to 30  minutes or till it turns brown.
15. Apply butter on the bread when it is hot.

Bourbon Biscuits

Children's favorite home-made bourbon biscuits !!


Ingredients :
For biscuits :
All purpose flour  ( maida ): 1 cup
Butter : 3 tbsp
Desi ghee : 2 tbsp
Cocoa powder : 2 tbsp
Powdered Sugar : 1/4 cup
Milk : 3 tsp ( use milk at room temperature )
Baking powder : 1/2 tsp
Vanilla essence : 1/2 tsp
Salt : A small pinch ( If you are using salted butter do not add salt )
Granulated sugar to sprinkle.

For cream :
Ingredients :
Butter : 2 tbsp
Cocoa powder : 3 tbsp
powdered sugar or castor sugar : 3 tbsp
Milk : 1 tsp
Mix all the ingredients together except milk. Add milk as required.
Do not make cream loose - it will come out from biscuits.

Recipe for biscuits :
1. Add butter & ghee in a bowl. Add sugar & beat till the mixture becomes light.
2. Sieve all purpose flour, cocoa powder & baking powder in the same bowl.
3. Add vanilla essence. Add 2 tsp milk.
4. Mix everything together to make a smooth dough. If required add a little milk.
5. Keep the dough in the fridge for an hour.
6. Take out the dough out from fridge. Roll it with a pin using butter paper. 
7. Cut the biscuits in long rectangular shape. Make holes above them with toothpick.
8. Sprinkle some granulated sugar on the biscuits.
9. Bake in preheated oven  at 170 C for 12 minutes.
10. Cool the biscuits completely.
11. Apply cream in between 2 biscuits & press gently. 
      
Your bourbon biscuits are ready!
Above measurement yields about 12 biscuits.
    
Enjoy with hot ginger tea or coffee. 

 

Vegetable stew

               Vegetable stew 



Ingredients :
All veggeis cut in dices
1. Cali flower  : 1/2 cup
2.  Onion   :  1/4 cup
3. French beans : 1/4 cup
4. Carrot   :  1/4 cup
5. Green paper : 1/4 cup
6. Paneer or Tofu : 1/4 cup
7. Potato   :  1/4 cup
8. Green peas : 1/4 cup
9. Coconut oil : 1 tbsp
10. Cinnamon   : 1 inch stick
11. Cloves  : 2
12. cardamom : 1 
13. green chilies : 2 
14. Coconut milk : 1 cup thick & 1 cup thin
15. Rice flour : 1 tbsp
16. Salt : as per taste
17. : spinach : 1/4 cup ( optional )
You can use any veggies you like.
      

Recipe :
1. Add coconut oil in a thick pan.
2. Add cinnamon, cloves, green chilies & cardamom when oil becomes hot ( not very hot )
3. Saute for a minute. Add onion, carrot & potato.
4. Keep the lid till they become little soft.
5. Add cali flower, green paper & peas.
6. Add 1/2 cup of water & cover with lid.
7. When all the veggies become soft add paneer or tofu.
8. Add salt as per taste.
9. Prepare a paste of rice flour with  thin coconut milk .Add this paste to above veggies.
10.Mix properly &  let it cook properly.
11.Add thick coconut milk & turn off the gas.
12 Serve hot with rice or garlic bread !!

semolina ( rawa) ladi pav

Healthy Semolina ladi pav recipe



                                                 
Ingredients :
 Medium semolina : 1 1/2 cups ( If you have coarse ( thick ) semolina just grind it.
All purpose flour ( maida) : 2 tbsp
Milk powder : 2 tbsp
Active Dry yeast : 1 1/2 tsp
Honey : 2 tsp ( You can use Sugar : 2 tsp )
Salt : 3/4 tsp
Butter : 2 tbsp
Vegetable oil : 3 tsp ( for kneading & greasing )
Warm water : 1 1/2 cups or as required.

Recipe :
1. Add semolina, all purpose flour, milk powder & salt in a large bowl. Whisk it properly with a spatula.
2. Add yeast, honey & 1/4 cup warm water in another bowl. Mix properly.
3. Keep it for 10 minutes or till yeast blooms.
4. Add this yeast mixture to dry ingredient. Add butter & 1/2 cup of warm water.
5. Add water gradually. You may not require all 1 1/4 cup of water.Mix to make a nice dough.
6. The dough should not be very tight. It should be loose as semolina absorbs more water than all purpose flour.Transfer the dough on clean greased platform. Knead the dough about 10 min. till it becomes elastic.Use oil as required. 3 tsp will be good enough for greasing also.  
7. Prepare a soft dough  & keep in a greased bowl .Cover the bowl  . Let it rest for 1 hour or till it doubles.
8. After 1 hour the dough will be double of original size.
9. Punch the dough to remove the air & again knead for about 2-3 minutes.
10.Make 8 equal parts of the dough. Shape the pavs as you like round or oval.Arrange the pavs on a lightly greased tray keeping distance of about 1 inch.
11.Again keep the tray for about 1/2 to 1 hour.
12. Bake the pavs in preheated oven at 200 C for 10 minutes or till it turns brown.
Above measurement yields about 8 medium sized pavs.    
Enjoy hot home made soft pav with bhaji or batatawada or with maska!!!

Baked Veggies

Today I prepared baked veggies in white wheat flour sauce. It is very healthy & tasted very yummy too.




Ingredients :
Broccoli : 1/2 cup 
Cauli flower : 1/2 cup 
Green Zukini : 1/4 cup ( optional )
Red, Green & Yellow paper cut in cubes : 1/2 cup
Potato cubes : 1/4 cup
Boiled fresh sweet corn : 1/2 cup
Onion cut in cubes : 1/4 cup
Boiled pasta : 1/4 cup ( optional )
Blanched spinach : 1/4 spinach
Paneer cubes : 1/2 cup
Grated cheese or any kind of cheese you like : 1/4 cup 
You can add or eliminate any veggies as per taste & availability.


For white sauce :
Wheat flour : 2 table spoon
Butter : 1 tbsp
Milk : 2 cups
Salt : 1/2 tsp or as per taste
Black pepper coarse powder : 1 tsp
Mixed dried herbs : 1 tsp
Garlic paste : 1/2 tsp
Grated or slice cheese : 1/2 tbsp
Add butter in a heavy bottom pan. Turn on the gas. Add garlic paste in the butter & saute for a minute. Add wheat flour & saute for 2 minutes. Colour should not be changed. Let the flame be on low. Add milk step by step stirring continuously with hand whisker. The paste should smooth without lumps. Add milk as per the consistency you like. Add salt, black pepper & mixed herbs & mix well. Add cheese so that the white sauce will be cheesy. Then add  veggies along with pasta & mix well.
Transfer it to a baking dish or tray, add cheese on the top & bake in the preheated oven at 200 C for 1/2 an hour.

Enjoy with garlic bread or can eat only baked veggies. It tastes so yummy.
