Soft & moist carrot & nuts cake with home made condensed milk !!
Ingredients :
All purpose flour ( maida ) : 1 cup
Whole wheat flour : 1/4 cup
Grated carrot : 1 & 1/2 cup
Sugar : 1/4 cup. If you have very sweet tooth then add more.
Condensed milk : 1/2 cup
Butter : 1/2 cup
Warm Milk : 1/2 cup or (as required)
Thick yogurt : 2 tbsp
Dry fruits as per individual taste. ( I used Almonds & Walnuts )
Cinnamon powder : 1 tsp

Chopped almonds: 1/2 cup
Chopped walnuts : 1/4 cup
Tuty fruity : 1 tsp ( optional )

Recipe :
- In a bowl sieve together maida, wheat flour, baking powder & baking soda. Then add cinnamon powder & jaiphal powder. Mix well. Keep aside.
- Take another bowl. Add butter & sugar. Mix well. Add condensed milk & yogurt. Mix nicely to form light mixture. Mixture will look curdled because of yogurt. Does not matter. Add vanilla essence.
- Add all dry ingredients mixture step by step. Fold the mixture gently. Add grated carrot. Add milk required & adjust the consistency.
- Add chopped walnuts.Mix & prepare smooth batter.
- Grease cake pan with butter or oil. Add batter in the pan.Top up the cake batter generously with almond slices.
- I prepared cup cakes also. Top with almond slices & tuty fruity.
- Bake the cakes at 180 C for 20 to 25 minutes.
