Ingredients :
Basmati rice : 1 cup
Water : 2 cups

Prepare smooth paste of coriander & mint leaves. Add lemon juice.
Garlic cloves : 7-8
Ginger paste : 1/2 tsp
Green chilli paste : 1/2 tsp
Cumin seeds : 1/2 tsp
Cloves : 4 number
Cinnamon : 2 inch stick
Mace : 1 number
Saffron threads : 7-8
Milk : 1/4 cup
Soak the saffron threads in hot milk for 10 minutes.
Desi ghee : 3 tsp
Chopped Vegetables:
Carrot : 1/4 cup
French beans : 1/4 cup
Calli flower : 1/4 cup
Broccoli : 1/4 cup
Red, green yellow pepper : 1/4 cup ( chopped in dices )
Green peas : 1/2 cup

Recipe :
1. Add water in a pan & bring it to boil. Add 1/2 tsp salt or as per taste. Add rice in the boiling water. When it is cooked 70 % turn off the gas.
2. In another pan add oil. When it becomes hot add onion & saute for some time.

3.Grind all dry masalas & garlic together. Add in the onion pan.
4.Add mint & coriander paste with lemon juice.
5. Add green beans & carrot. Add all other veggies one by one except green peas.
6. Add salt as per taste, add sugar. Mix properly. Add green peas. Add yogurt. Mix well.
7. Turn off the gas. I cooked my biryani in my Treo pan.4.Add mint & coriander paste with lemon juice.

8. In another pan add 1 tsp ghee. Add one layer of veggies, then one layer of rice. Add 1 tsp ghee on rice layer.
9. Likewise I made 2 more layers of veggies & rice. On the uppermost layer of rice add remaining ghee & sprinkle saffron milk mixture.
10. Add some coloured pepper dices, mint leaves & chopped coriander.
11. Cook the biryani till fully done. Do not overcook.
Garnish with cashews & serve hot with raita.
I love lots of veggies in my biryani. You can add veggies of your choice.
