Ingredients :
Sabudana : 1 cup
Quinoa : 1/2 cup ( optional because it is not easily available in India)
Mashed potato: 1/2 cup
Yam or sweet potato : 1/4 cup
peanut powder: 1/4 cup (coarsely ground )
Roasted flax seed powder ( javas or alsi ) : 1/4 cup ( optional)
Ginger & chilli paste : 2 tsp
Handful of coriander finely chopped
Salt : 1 tsp
Sugar : 2 tsp
Desi Ghee or oil : 2 tsp
Cumin seeds : 1tsp
Cumin powder : 1/2 tsp
Lemon juice : 2 tsp
Recipe:
- Soak sabudana in 3 cups of water for about 4 hours. It should become soft. Pressure cook quinoa for 2 whistles.
- Mix sabudana, cooked quinoa & all other ingredients except ghee & cumin seeds.
- In a non stick vessel add ghee & keep it on medium flame.
- Add cumin seeds in it when it becomes hot.
- Add the mixture of sabudana in that , stir well & keep for 5 min. on slow flame covered with lid it.
- Turn off the flame & keep for another 5 min.
- Open the lid , when mixture becomes cool again mix well with hand & prepare small balls of the same.
- Grease the griddle ( I use non stick appe-pan which is easily available) with little ghee.
- Put the balls of sabudana mixture in appe pan & keep it covered on low flame. After 2 min. turn on the balls . When all the sides become golden brown then sabudana wadas are ready.
- Serve with chutney .
- I arranged some sabudana vadas pressing them flat & baked for 10 min. at 180 C. That also turned out very well.
Try this different kind of chutney.( 1 medium size green bell paper (simla mirch), 2 tb sp coarse peanut powder, 1/4 cup fresh coconut,2 tb sp plain yoghurt, 1 green chilli, corriender, salt & sugar as per taste.)
